Who I am

My name is Ayça Başak BARTU, food engineer with HACCP specialization. I have always loved in-depth study of all the fundamental aspects that orbit around food, its production and distribution. I research the balance of diets, according to their sustainability, because human health cannot be separated from that of the planet. My mission is to be part of the solution and not part of the problem, and I want to share my knowledge with you, involving you in this fundamental Revolution for a healthy and sustainable diet.

In 35 years (between 1980 and 2014) of this morbid opulence, the number of people suffering from diabetes worldwide has increased from 4.7% to 8.5%. Today, more than 2 billion people can be described as overweight and 700 million of them have even exceeded the threshold of obesity. It is a fact that cardiovascular diseases, like all other disorders related to the metabolic syndrome, are directly linked to poor nutrition and a sdentar lifestyle.
In short, we eat too much and too badly.
That is why we must reduce the quantity and increase the quality: this is the only way to ensure ourselves a long and healthy life. I will help you to understand how.

It is very natural to think the opposite, it has been instilled in us since we were born, but this is no longer the case: we are not the owners of the world, we have borrowed it from future generations. without even worrying about our future or that of the coming generations, and about the very same planet from which, we are drawing all the reserves created in millions of years. The Earth is suffering from unscrupulous human activities. We closed our eyes, when farmers were forced to turn their backs on millenarian agricultural traditions; we traded genuine flavors for “fakes”, produced by so-called conventional agriculture, doped by too much fertilizer, too much irrigation, too many chemicals such as pesticides, insecticides; too much mechanization to be able to obtain competitive prices and an abundance that we have always dreamed of. We have been passive spectators when the same thing, for the same reasons, has been done to the breeders; we bartered the less but good, for the much more and a very clear ‘who-cares-about-the-rest’. We made no noise, when farms became a concentration camp for animals, sometimes without a day of sunlight in their short lives, fattened by altered feed, as long as the Sunday lunch never lacked the very traditional roast. In just 40 years, due to these practices, water reserves are scarce, the productivity of the soil is damaged after repeated chemical treatments, the air we breathe and the water we drink contain residues of each of the errors described. Last but not least, we have to consider also how we abuse the producer countries of the developing world, and habitats stolen from their legitimate owners through deforestation.
All of this can come to an end: I will show you which paths to take.

 And so Revolution!

I am sure that this is not the first time that you have become aware of such problems, and I am mindful that this is not the first time that you have felt inadequate, powerless in the face of all this. We always expect someone else of greater authority, with a declared power to change things, to take matters into their own hands and guide us towards salvation. But every day that passes, brings us closer to the fateful year 2050, when the world’s population is estimated to be close to 10 billion people. With the natural reserves at our disposal, combined with the right of those who in increasing numbers want access to food opulence, the situation will become unsustainable, and only a miracle could feed everyone. The big multinational corporations of Agribusiness are waiting for nothing else. Large sums of money (partly also public money) are invested in the most advanced technologies, to guarantee first of all high profits to the monopolizer producers, disguised as well intentioned: it is meaningless to talk about, how much the damage can only continue to amplify.
Therefore, if we really want to change the world, we must change ourselves first, without waiting for Godot anymore: we have a power that no one can take away from us, awareness.
Don’t worry, no one here will ask you to become vegetarians and vegans.

Being part of the solution

The solution is not made up of absolutism, because it must involve everyone, everyone with their own abilities and possibilities. I welcome those who had success to ban animal proteins from their diet, but my motto is leaving no one behind, any effort made to improve our future is sacred. Change must involve everyone and now, not tomorrow.
So to be part of the solution and not of the problem, we will have to focus on what we can do individually. I firmly believe that the actions to improve our lives at 360° are numerous, at our fingertips, we should just find the right compromise for each of us. Changing our habits is never easy, but think about how much we could achieve if we add to the table a little bit of awareness.
