This lentil quiche is a great way to enjoy a healthy, affordable, protein-rich and gluten-free meal. It’s also a tasty and simple way to use up leftover vegetables, making it perfect for the whole family, including picky-eaters.
Compared to other lentil-based recipes, such as lentil pizza, it’s much faster to make because you don’t need to soak the lentils overnight.
Another advantage is that it’s very easy to prepare and doesn’t require a food processor or a simple mixer (so fewer utensils to wash up). Since I’ve been living on a boat again, I really appreciate this feature.

Who is the lentil cake suitable for?
At first glance, it may seem that this savory red lentil bread is intended primarily for people with coeliac disease and gluten sensitivity. However, this recipe can satisfy practically everyone*: vegans (by adapting the base recipe), vegetarians, omnivores, coeliacs, people with lactose intolerance, diabetics or those with insulin resistance, people with irritable bowel syndrome (provided they use hulled lentil flour), those on a diet or anyone looking for a protein boost.
(*: However, lentils are high in purines, so are not the ideal option for those suffering from gout or uremia.)
TO LEARN WHICH FOODS ARE AFFORDABLE AND PROMOTE LONGEVITY
Ingredients for a savory lentil flour cake
- 150g or 1,2 cup hulled red lentil flour
- 200g or 1,4 cup pre-cooked vegetables (any seasonal vegetables)
- 3 tablespoons plain yogurt (or plant-based), or kefir
- 1 egg (or VEGANIZE IT by 2 tablespoons chia seeds + 5 tablespoons water)
- 3 tablespoons extra virgin olive oil, 1 of which for greasing the baking pan
- half a clove of garlic, grated
- 1 fresh spring onion, or 1/4 onion, finely chopped
- 1 level teaspoon baking soda + 1 tablespoon vinegar (or 1 teaspoon baking powder)
optional ingredients - 10 mushrooms, thoroughly washed and finely chopped
- A pinch of thyme or oregano and/or mint
- 40g or 4 tbsp grated cheese (vegan or regular), or 2 tablespoons of nutritional yeast
- 2 tablespoons of sun-dried tomatoes, soaked and finely chopped
- 2 tablespoons pitted black olives, finely chopped
- sesame seeds and/or cumin seeds and/or pumpkin seeds and/or sunflower seeds for garnish
Directions for an easy Lentil quiche
This lentil bread is quick and easy to make. The best part? There are no “buts”.
Step 1. First, preheat the oven to 200°C or 400 F.
Step 2. In a mixing bowl, combine the lentil flour with the pre-cooked vegetables (such as escarole, spinach, broccoli rabe or a mix of asparagus and artichokes) and all the other ingredients, including the optional extras, except the baking soda-vinegar mixture or baking powder. It’s better if the vegetables aren’t squeezed dry as the water they contain will help form the dough.
Step 3. Mix well — a fork is sufficient; there is no need to use a food processor, as the different textures add an extra layer of enjoyment when chewing.
Step 4. When the oven has reached the set temperature, grease a baking dish.
Step 5. Add the baking soda or baking powder mixture, give the batter one final stir, pour it into the baking dish and, if desired, sprinkle with seeds. Bake for 20–25 minutes or until the crust turns golden brown.
Serve warm, but it’s also delicious cold or reheated.
Smart combos
Since this scrumptious lentil cake is rich in protein, minerals, dietary fiber, and complex carbohydrates we can use it as a main, by enhancing it only with a few essential amino acids, healthy fats, and vitamins, particularly vitamin C.
To that end, I suggest to start with a delicious tomato soup or an egzotic yogurt soup; then a fennel salad with oranges and olives, or a purslane salad, a romesco sauce, or a guacamole.
For dessert, try a healthy treat rich in sulfur-containing amino acids, such as a lemon millet cake or a vegan orange cake.
